3 Quick Make-Ahead Munchies in a Mintie Snug

Here are my top 3 go-to munchies I make and carry in my Snug. Hope you love them too!!

  1. Kleen Kitchen Harissa Falafel  - if you haven’t seen the beautifulness that is the Kleen Kitchen I would urge you to head over to her website RIGHT NOW! Nicola makes the most delectable cakes and sweet treats which are gluten-free, refined sugar-free & vegan too. There is no doubt she is a cake alchemist but she also makes some yummy savoury dishes like her Harissa Falafel which are perfect wrapped in lettuce leaves and slathered in hummus or just eaten on their own.   2. Elena’s Pantry Date Brownies - I love a sweet treat and these brownies are the best. It's super adaptable for many dietary needs and it can all be made in a food processor really quickly.  This recipe calls for eggs but if you are vegan or can’t tolerate eggs you can replace these with mashed banana or chia seed eggs instead. I made these last week and you may have seen them in my post here. I fill half my Snug with bite-sized brownie bits and the other half with fruit -  blueberries and clementines are a good mix and look beautiful too. 
  3. Big Ballsy Baked Veg  - cut, season and cover in olive oil:
    2 x sweet potatoes
    2 x red peppers
    2 x courgettes
    1 x head broccoli 
    1 x big red onion

    Sprinkle with ground turmeric, cumin and chilli flakes and bake in the oven for about 30-40 mins on 180 / gas mark 4. When done, divide one portion into your Snug and the other into another container (a Mintie Max would be perfect, ;) top with ground nuts, seeds & tahini. I love this and will happily eat it cold, as the spices are warming and the veg hold their shape well. You’ve also got a portion for another day too!
