Kimchi Style Cabbage - by @Hey_Renu
Using my left over cabbage I made a cabbage and carrot kimchi style. This took 10 minutes to make and you can eat this as a side, a salad or just on its own with some lentils and grains.
Ingredients
- 1/2 tsp of salt
- 1/2 tsp mustard seeds
- 1/2 tsp pomegranate seeds
- 1/2 tsp turmeric powder
- 1 large chilli sliced
- 2 tsp of white wine vinegar
- 3 tsp of lemon squeezed
- Thumb sized piece of finely sliced ginger
- A handful of cabbage finely sliced
- 1 large carrot finely sliced
- 2 tsp of passata or fresh chilli sauce
- A handful of coriander
Method
Firstly you fry the mustard seeds, chilli, and ginger. Add the the spices and add the carrots. Cook for 1-2 minutes. Next add the cabbage and cook for a further 2-3 minutes. Squeeze the fresh lemon and add the white vinegar. Sprinkle over the coriander to garnish. Eat and enjoy! This also works well as left-overs and can be stored in Mintie until needed.
